When using personalization (in content, subject lines or elsewhere), consider using a fallback value. This enables sending personalized emails to contacts missing the personalisation data.
In the email content editor, in the placeholder menu, check the "default value" box and (optionally) fill a value:

In the subject line editor, click the personalization icon and check the Fallback value box:
